Spiced Chicken and Mango Salad!! This might sound strange, but foods I think are the combinations of two or more eatable things. Sometimes think of anything and make some combinations, you will be surprised at your later achievements.
Ingredients for preparation;
1 medium onion, chopped
3 black cardamom pods, seeds removed and crushed
2tsp coriander seeds, crushed
2 cloves garlic, crushed
1 red chili, seeds removed, finely chopped
1tsp brown sugar
200g (7oz) low fat natural yogurt
2tbsp double cream
Squeeze lime juice, plus extra lime wedges, keep aside to serve
¼tsp sweet paprika
500g (1lb 2oz) cooked and cooled free-range chicken or turkey, torn
1 fresh mango, peeled destoned and chopped into large slices
Get small bunch coriander, finely chopped
Then, mixed salad, keep aside to serve
Heat oil In a large frying pan, then fry the onion until golden. Add the cardamom, coriander seeds, garlic and red chili. Allow cooking for 1 or 2 minutes until the spices are fragrant and the garlic have softened. Stir in the sugar then set aside to gently cool.
Combine all the mixtures with the yogurt cream, lime juice and paprika. Add the chicken, mango and coriander, then mix to coat. Allow to season properly.
Yeah! Yummy food is ready!! Serve on a platter over salad leaves, lime wedges and a little coriander. Right combination isn’t it?
